We are what we eat: food defines us as it nourishes us. Pete Brown interviews food writers Asma Khan and Nargisse Benkabbou about how our food memories shape who we are, but also how the dishes change as our lives change. Asma runs Darjeeling Express, acclaimed for its combination of ancient family recipes drawn from Asma’s Mughlai ancestry, and Calcutta street food. Nargisse was named Observer Rising Food Star 2018, and is author of the Casablanca, a cookbook reflecting both a modern and traditional take on Moroccan cooking.
